In the heart of the Médoc Atlantique group of local councils, Élise and Adrien head the Uijttewaal wine estates that produce, amongst others, the Château Saint-Hilaire grand cru. Bertrand Lung grows oysters at his farm Eau Médoc. We also discover the Étang de Cousseau nature reserve and the Hourtin-Carcans wetlands.

In the Forêt d'Orient et Grands Lacs region, Aube, in the heart of his organic kitchen garden, Arnaud Nunes grows but also passes on his expertise. Meanwhile, Mathias Petit and family are busy harvesting the plants for their jellies and jams. Finally, we discover the region's fire-bellied and yellow-bellied toads.

The Aube, at the Ferme de l'Ancre where Nathan Cholet grows wheat and produces sunflower oil. Christophe Duminil shows that apples know no limits. With Mathieu Hugo we discover the incredible woodland biodiversity of the Pays d'Othe et d'Armance. Finally, the Chaource AOP cheese and its history rich in flavour.

Cathar Country

In France's Cathar country, Laurent Malis grows several varieties of rice in the paddy fields of the Domaine Saint-Gabriel estate and Edoardo Antonini has specialised in making mozzarella. We also discover Gruissan's age-old salt marshes, the Cabrespine Chasm and all the secrets of the Castelnaudary cassoulet.
