In his "garden" in the Gulf of Morbihan, Yvonnick Jegat cultivates the art of the natural oyster. He uses only sea-born baby oysters, known as spat, that are then raised on the sandy seabed. Maison Jegat, founded in 1925, is a pioneer in the defence of traditional oyster farming.
