HOMARD: LES PINCES DE L'ATLANTIQUE

No longer reserved for special occasions, lobster is gradually becoming more accessible. To meet increasing demand, the French are going to Canada and the US to find lobster, investing in massive reintroduction programmes. The orange-shelled crustaceans brought in by plane are in competition with the famous blue Breton lobster.
