Mussel "éclade" in La Rochelle
We head for La Rochelle, Charente-Maritime, where France discovers the world of mussel-farming. Florian's family have been farming mussels for several generations. With Martine, his mother, and restaurant-owner Agnès, France learns to cook a traditional mouclade. She then follows the preparation of a mussel "éclade", cooking mussels with pine needles.
